Anzac biscuits

Anzac Biscuits 

Ingredients:

1/2 cup Edmonds Standard Grade Flour
1/3 cup sugar
2/3 cup coconut
3/4 cup rolled oats

50g butter
1 tablespoon golden syrup
1/2 teaspoon Edmonds Baking Soda
2 tablespoons hot water

Method:

Preheat oven to 180°C. 
Mix together flour, sugar, coconut and rolled oats in a large mixing bowl
Melt butter and golden syrup in a small pot. 
Dissolve baking soda in the hot water and add to butter and golden syrup. 
Stir butter mixture into the dry ingredients. 
Place level tablespoonfuls of mixture onto lined trays. 
Bake about 15 minutes or until golden.
Makes 20.

Kidz kartz

On 26th and the 28th of March I was racing at the Hawera Easter trots along with Katelyn Symes and 6 other kids from Hawera and 2 from Waikato Kiddz kartz.
I was racing for the Hawera cup and I got 2nd, 1st, 1st, 4th then disqualified from my last race as I galloped for 2 long and was already on a warning. I ended up over all 1 equal on points and took out the cup along with Tayla. Katelyn was racing for the Elis cup and got 2nd, 1st, 3rd and disqualified but still managed to get 2nd overall on points.
I was so proud of myself and Katelyn on how well we raced as this is our first year racing out on the track.
